  • 375grams egg or rice noodles
  • 1tablespoons sesame oil
  • 500grams chicken thigh fillet, finely sliced (or peeled prawns)
  • 400milliliter coconut cream
  • 400milliliter chicken stock
  • 2 limes (for the juice)
  • 1teaspoons dark sugar
  • 2teaspoons fish sauce
  • 8 kaffir lime leaves
  • 250grams bean sprouts
  • 1 red chilli (sliced)
  • 1/3 cup Valcom red curry paste
  • 1 bunch mint, chop the leaves
  • 4 spring onions, finely sliced
  • 1 cup dried shallots

Description

This is a really tasty family favourite. I think it benefits from sitting for an hour or two for the flavours to develop before reheating.

Method

Step 1 of 7

Cook the chicken thigh fillet in the sesame oil for approx 5 minutes and put to one side in a bowl.

Step 2 of 7

Heat the curry paste in a little oil in a saucepan for 3 minutes.

Step 3 of 7

Pour in/add the coconut cream, chicken stock, lime juice, sugar and fish sauce. Bring to the boil and then lower heat to a simmer.

Slice the kaffir lime leaves in half and add to the saucepan. Let these simmer for about 10 minutes and then remove the leaves.

Add the cooked chicken and simmer for about 5 minutes. Tip: I often let the soup then sit for anywhere up to 2 hours to let the flavours develop and the chicken absorb the flavour.

While the soup is simmering (or, if you let the soup sit for a while, before you start to reheat the laksa) add the noodles to a large bowl and pour boiling water over them. Follow the instructions on the packet to determine how long to soak the noodles.

Step 7 of 7

Drain the noodles. Place noodles into large soup bowls and add some bean sprouts. Ladle over the soup and top with chopped chilli, chopped mint leaves, spring onions and crispy shallots.
