- 2 lemon grass stalks, white only
- 2 clove garlic , peeled
- 6 shallots peeled (1 onion)
- 1teaspoons turmeric powder
- 1teaspoons coriander powder
- 1/2tablespoons salt
- 2tablespoons brown sugar (or coconut sugar from woolies)
- 1teaspoons chilli powder (or less)
- 1kilograms chicken wings
- 3-5tablespoons olive oil (for baking and bbq of the chicken wings)

A tasty twist on satay skewers.

Method
Step 1 of 8
If you have a mortar and pestle mash the lemongrass,shallots ,add all the spices and salt sugar OR use a bowl and a meat mallet to pound the spices.

Mix the paste.

Rub the paste all over the chicken wings.

Marinate in the fridge overnight.

Now place the chicken wings in a baking dish brush with oil, cook on a low to medium heat until about 90 per cent cooked. Around 60 mins at 100 degrees. Low and slow.

Remove from the oven.

Finish cooking the chicken wings on the BBQ. Turn them every so often so they don't burn from the sugars in the marinade.

I served mine in a large bowl with Turmeric rice, pineapple slices, BBQ Satay prawns with fresh coriander and cucumber. I used the same spice mix and marinated some prawns for a few hours in the satay spice mix then BBQ cooked then just before the chicken wings were cooked. Serve with your favourite satay sauce and oven roasted peanuts tossed in a sweet chilli salt glaze. This looks so cool in a massive stainless steel bowl. Enjoy!
