For the sauce
- 4tablespoons vegetable oil
- 4tablespoons peanut butter
- 2tablespoons soy sauce
- 4 cloves garlic
- 1tablespoons ground ginger
- 2 limes, juice only
- 1tablespoons vegetable oil
- 300grams white onion, chopped
- 5 fresh root ginger, 5cm piece - peeled and chopped
- 3 cloves garlic, finely chopped
- 1 lime, juice only
- 2tablespoons soy sauce
- 2tablespoons brown sugar
- 2teaspoons chilli flakes
- 700grams pork fillet, cut into large chunks
Description
Satay is the national dish of Indonesia and a favourite during festivals.
Method
Step 1 of 3
Place the onion, ginger, garlic, lime juice, soy sauce, sugar, and chilli flakes in a food processor and pulse to form a smooth paste. Mix the pork with the paste in a bowl or plastic bag and chill in the fridge for 2 hours. Soak 4 bamboo skewers in water for at least 30 minutes.

Heat the oil in a large frying pan. Remove the pork from the marinade and thread onto the skewers. Cook over a medium heat for 5-7 minutes, or until well-browned on all sides and cooked through.

For the sauce, place the peanut butter, soy sauce, garlic, ginger, and lime juice in a food processor and pulse until combined. Turn the processor on high and add the vegetable oil in a steady stream. Serve the pork hot with the peanut dipping sauce on the side.
