- 500grams pork tenderloin, sliced into strips
- 2tablespoons sesame oil, divided
- 5tablespoons peanut butter
- 1/3 cup coconut milk
- 4tablespoons lime juice, divided
- 250grams rice noodles, ready to eat
- 1 large cucumber, peeled into ribbons
- 1 pack coriander, fresh, chopped
- 4 spring onions, finely sliced
- 40grams peanuts, roasted, chopped
Description
Classic pork satay is so simple to make but really delivers on the flavour front.
Method
Step 1 of 4
Pre-heat the grill to the highest setting. Whisk the coconut milk with a teaspoon of sesame oil, half of the lime juice and the peanut butter. Place the pork strips in a shallow dish and pour over the sauce. Cover and leave to marinade for 10 minutes.
Step 2 of 4
Thread the pork on to soaked wooden or metal skewers and cook for 12-14 minutes under the grill, turning halfway through.
Step 3 of 4
Cook the rice noodles according to pack instructions and toss together with the coriander, spring onions, lime juice, sesame oil and cucumber ribbons.
Step 4 of 4
Serve the satay skewers with the noodle salad and crushed peanuts on top, with soy sauce to taste.
