- 400grams pork chops, boneless, fat trimmed
- 100grams peas, frozen
- 150grams pineapple, peeled and diced

Description
This spiced pork recipe with rice and peas is a delicious Caribbean classic you can enjoy at home.
Method
Step 1 of 3
Tip the rice, onion, garlic, black beans and coconut milk into a large saucepan with 100ml of water. Bring to the boil, reduce the heat and simmer with the lid on for 25 minutes.
Step 2 of 3
Whisk the jerk seasoning with half of the lime juice, half of the zest and the oil to form a paste. Coat each pork chop in the paste. Toss the remaining lime juice and zest with pineapple in a small bowl.
Step 3 of 3
Heat a large griddle pan on high and cook the pork chops for 4 minutes on each side. Stir the peas into the rice and cook uncovered for 2 minutes. Serve the chops with rice and peas and chopped pineapple on the side.
