- 2 onions, peeled and sliced
- 2 cloves garlic, peeled and minced
- 1 bulb fennel, sliced
- 2 medium apples, peeled, cored and sliced
- 1/4 bunch thyme (3 sprigs)
- 1tablespoons apple cider vinegar
- 3/4 cup chicken stock, made with 1 stock cube

Description
This meatball dish is delicious but simple with delicate aniseed flavours complementing the pork.
Method
Step 1 of 2
Heat the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 5 minutes until browned all over. Remove from the pan with a slotted spoon and set aside.
Step 2 of 2
Add the onion, garlic, thyme and fennel to the pan and cook for 3-4 minutes. Pour over chicken stock and vinegar, add the apples and meatballs and cover with a lid. Simmer for 20-25 minutes and serve.
