- 3tablespoons olive oil, divided
- 4 large tomatoes, skinned, deseeded and chopped
- 2 cloves garlic, peeled and minced
- 500grams lamb mince
- 2teaspoons mint, dried
- 1teaspoons oregano, dried
- 1teaspoons lemon, zest
- 1 large egg
- 200grams feta
- 4 pitta bread
Description
These pita pockets make a perfect lunch or dinner served with sweet potato wedges and salad.
Method
Step 1 of 4
Heat one tablespoon of oil in a frying pan on a medium high heat. Add the garlic and cook for 1 minute, then add the tomatoes and cook down for 4 minutes.

In a large bowl, mix the lamb mince with the dried herbs, seasoning, lemon zest and the egg, using your hands to ensure it is well combined. Crumble in the feta and mix again. Roll into 20 meatballs.
Step 3 of 4
Heat the remaining oil in a large frying pan on high heat and add the meatballs, cooking for 6-7 minutes, tossing to ensure they are browned on all sides. Pour over the tomato sauce, reduce the heat and simmer for 2-3 minutes.
Step 4 of 4
Toast the pitas and slice open, fill each with meatballs and tomato sauce and serve.
