  • 4 fresh Italian-style pork
  • 3tablespoons olive oil
  • 2 cloves garlic, grated or finely chopped
  • 4 sprigs fresh dill
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 4 slices thick slices Italian-style crusty ciabatta, to serve
  • 4 ripe tomatoes, deseeded and diced
  • 115grams kalamata olives, pitted and diced
  • 1 handful fresh basil leaves, torn
  • 2tablespoons extra virgin olive oil

Method

Step 1 of 4

Put the sausages in a shallow glass or ceramic dish. Add the olive oil, garlic, and dill, and season with a little salt and black pepper. Stir the sausages around so that they are well coated. Cover with cling film, and leave to marinate in the refrigerator for at least 1 hour.

Meanwhile, to make the salsa, combine all the ingredients in a bowl, and mix well. Season with salt and black pepper.

Step 3 of 4

Heat a grill or barbecue, or a heavy frying pan, until hot. Grill the sausages for 10-15 minutes until cooked through, turning halfway during cooking to brown both sides.

Step 4 of 4

Divide the sausages between 4 serving plates, and serve on a piece of toasted ciabatta, with the tomato salsa spooned over. Serve immediately.
