  • 4 anchovies, drained and chopped
  • 800grams lamb mince
  • 2 medium red onion, peeled, 1 grated, 1 chopped into rings
  • 70grams gherkins, drained and finely chopped
  • 3tablespoons parsley, fresh, chopped
  • 70grams mixed lettuce
  • 1 medium lemon, juice and 1/2 tsp of zest
  • 4 wholemeal buns
  • 2tablespoons mayonnaise

Description

Anchovy is the surprise ingredient that takes these lamb burgers to the next level flavour-wise.

Method

Step 1 of 3

Mix the lamb mince, grated onion, anchovies, gherkins, lemon zest and parsley together in a bowl. Shape into 4 patties with your hands .

Step 2 of 3

Pre-heat the oven to 170°C. Heat the oil in a large pan on high heat and cook the burgers for 2 minutes on each side. Place on a baking tray and cook in the oven for 15 minutes.

Step 3 of 3

Toss the mixed leaves with lemon juice in a bowl. Toast the buns to your liking, spread with mayo, top with a burger, leaves and red onion rings and serve.
