  • 1 large avocado, sliced
  • 2 large tomatoes, sliced
  • 3 brown onions, thinly sliced
  • 10 small flour tortillas
  • 1 lime, cut into wedges (to serve)
  • 1tablespoons lemon juice
  • 40grams baby spinach
  • 2tablespoons olive oil
  • 5 WW Angus beef & caramelised onion sausages

Method

Step 1 of 4

Drizzle sausages with 1 tbs oil. Heat a barbecue or grill pan over high heat. Cook sausages for 7-8 minutes or until almost cooked through. Halve sausages lengthways. Cook cut-side of sausages until browned and cooked through.

Step 2 of 4

Meanwhile, heat 1 tbs of the oil on barbecue flat plate or in a large frying pan over medium- high heat. Cook onions, stirring occasionally, for 7-8 minutes or until golden and caramelised.

Step 3 of 4

Lightly warm tortillas on barbecue or grill pan until pliable.

Step 4 of 4

Slice sausages. Fill tortillas with spinach, tomato, avocado sliced and sprinkled with lemon, sausage and onion. Serve with your favourite sauce and lime wedges.
