- 2 tomatoes, sliced
- 1/4 red cabbage, shredded
- 1 cucumber, sliced
- 1 large sweet potato, cut into 8 x 1cm-thick rounds
- 5milliliter virgin olive oil spray
- 1/4teaspoons garlic powder
- 1/2teaspoons dried Italian herbs
- 1/4 cup hummus
- 250grams lean beef mince
- 1 egg, lightly whisked
- 1/4 cup breadcrumbs

Method
Step 1 of 4
Place mince, breadcrumbs, egg, dried herbs, garlic powder, salt and pepper in a mixing bowl and stir to combine. Divide mince into four patties and shape with hands. Set aside.
Step 2 of 4
Arrange sweet potato slices on a microwave-safe plate and cook on high for 2 minutes or until starting to soften.
Step 3 of 4
Preheat a barbecue grill or grill pan on medium-high heat. Spray sweet potato slices lightly with olive oil. Cook sweet potato and beef patties on grill for 3-4 minutes each side or until caramelised and cooked through.
Step 4 of 4
Coat four sweet potato slices with hummus and top with beef patties. Top with remaining ingredients and finish with remaining sweet potato slices to serve.
