For the salsa
  • 1/4 cucumber, roughly chopped
  • 2tablespoons fresh coriander, chopped
  • 1/2teaspoons pepper
  • 500grams minced steak
  • 1teaspoons smoked paprika
  • 4 spring onions, thinly sliced
  • 1 egg, yolk only
  • 1teaspoons English mustard
  • 1tablespoons olive oil
  • 4 chestnut mushrooms, trimmed and sliced
  • 4 wholemeal buns
  • 4 slices Gruyère cheese

Method

Step 1 of 4

Place the minced steak in a bowl with the paprika, spring onions, egg yolk and mustard and mix together with a fork until thoroughly blended. Shape into 4 patties.

Step 2 of 4

Cook the burgers under a preheated high grill for 10 minutes, turning once, until well browned and cooked through.

Step 3 of 4

Meanwhile, heat the oil in a large, heavy-based frying pan and cook the mushrooms over a high heat, stirring frequently, for 5 minutes until browned. Make the salsa by simply tossing the cucumber and coriander together, and season with a little pepper.

Step 4 of 4

Split each roll and serve a burger in each, topped with a slice of cheese to melt, then the mushrooms and a spoonful of salsa.
