  • 6 bread rolls, split (white or wholegrain)
  • 1tablespoons no added salt tomato paste
  • 1 large ripe tomato, sliced
  • 1 carrot, finely grated
  • 1 oakleaf lettuce, leaves separated
  • 200grams portobello mushrooms, finely chopped
  • 2 onions, sliced
  • 2tablespoons continental parsley, finely chopped
  • sauce or relish (to serve)
  • 225grams can beetroot slices, drained
  • 400grams plant based mince
  • 1 small garlic clove, crushed
  • 6 slice cheddar

Method

Step 1 of 4

Combine mince, mushroom, carrot, tomato paste, parsley and garlic together in a bowl. Knead together well with clean hands. Divide into 6 portions and shape into thick patties.

Step 2 of 4

Heat a barbecue plate on medium heat. Cook onion for 10 minutes, turning frequently, or until browned. Transfer to a plate.

Step 3 of 4

At the same time, cook patties for 8 minutes on each side or until cooked through. Place a cheese slice on each patty. Transfer to a plate.

Step 4 of 4

Meanwhile, toast bread rolls, if desired. Place bases on serving plates, and top with lettuce, 2 slices each of tomato and beetroot, onion, burger patty and sauce or relish. Top with lids and serve immediately.
