- 750grams white boneless fish fillets, cut into 4cm strips
- 120grams leafy salad mix
- 750grams frozen potato chips
- 1 lemon, cut into wedges (to serve)
- 1/2 cup parmesan, finely grated
- 1/2 cup garlic aioli (to serve)
- 2 eggs
- 3 cup potato chips, finely crushed

Step 1 of 2
Preheat oven to 220°C. Line 2 large baking trays with paper. Cook chips on one tray following packet instructions.

Meanwhile, whisk eggs in a shallow bowl. Combine crushed chips and parmesan in a separate bowl. Dip the fish pieces into egg then coat with chip mixture, pressing on them firmly. Lay on a lined tray and bake for 10 minutes or until golden and cooked through. Serve fish strips with cooked chips, salad, lemon wedges and aioli.
