  • 1/2 cup pale beer
  • 1 avocado, deseeded, diced
  • 1 small red chilli, seeded, chopped
  • 2tablespoons coriander, roughly chopped
  • 2 spring onions, finely chopped
  • 1/3 cup light sour cream
  • 800grams washed white potatoes
  • 1 lime, juiced
  • 1 chargilled steak

Method

Step 1 of 3

Peel potatoes and cut into 2cm cubes. Place into a medium pan and cover with cold water. Bring to the boil over medium-high heat. Cook for 12 minutes until tender.

Meanwhile, combine avocado, onion, coriander, chilli and juice in a bowl. Season to taste.

Step 3 of 3

Drain and return potatoes to pan. Add half of the beer and shake over heat to dry off. Mash well. Beat with a wooden spoon, gradually adding remaining beer until smooth. Beat in sour cream and half the avocado salsa. Season to taste. Serve with remaining salsa and chargrilled steak or chops, if desired.
