  • 700grams pork chops
  • 1tablespoons olive oil
  • 1teaspoons fennel seeds
  • 2tablespoons extra virgin olive oil
  • 2tablespoons red wine vinegar
  • 2-3 sage leaves, chopped
  • 4 dessert apples, cored and thinly sliced into rings
  • 3 celery sticks, thickly sliced
  • 12 green grapes, halved
  • 1teaspoons pepper

Method

Step 1 of 4

Brush the chops with the olive oil and sprinkle with the fennel seeds and pepper.

Step 2 of 4

Place on a rack over a roasting tray and bake in a preheated oven, 200°C, Gas Mark 6, for 20 minutes.

Step 3 of 4

Meanwhile, whisk the extra virgin olive oil, vinegar and sage together to make a dressing.

Step 4 of 4

Toss the apples, celery and grapes together with the dressing and serve with the roasted chops.
