  • 1 clove garlic, crushed
  • 500grams mountain bread
  • 1/4 cup coriander, chopped
  • 1 small onion, finely chopped
  • 225grams baby spinach leaves
  • 2tablespoons sweet chilli sauce
  • 1tablespoons olive oil
  • 750grams chicken mince
  • 1/2 cup cashews, dry roasted, chopped
  • 100grams lime and black pepper chips, finely crushed

Method

Step 1 of 3

Combine mince, onion, chips, cashews, coriander, garlic and chilli sauce in a large bowl and mix together well (or process in a food processor). Divide mixture into 12 portions and shape each into a 12cm-long log.

Step 2 of 3

Heat oil in a large frying pan over medium heat. Add the koftas and cook, turning occasionally, for 8 minutes or until golden brown and cooked through.

Step 3 of 3

Wrap kofta in pieces of bread with spinach and beetroot. Serve with extra sweet chilli sauce.
