  • 2 red onions, thinly sliced
  • 4 Lebanese bread rounds, warmed
  • 1/3 cup parmesan, finely grated
  • 120grams baby spinach
  • 2/3 cup mozzarella, coarsely grated
  • 350grams lamb mince
  • 1 1/2tablespoons olive oil
  • 1tablespoons fresh thyme
  • 2tablespoons pine nuts, toasted
  • 2 ripe tomatoes, deseeded, chopped
  • 3 cloves garlic, crushed

Method

Step 1 of 3

Heat 1 tbs of oil in a frying pan over medium-high heat. Add onion and cook, stirring frequently, for 10 minutes or until light golden. Add garlic and thyme and stir for 1 minute or until fragrant. Add lamb and cook, stirring to break up lumps, for 5 minutes or until browned. Stir in tomato and pine nuts. Remove from heat.

Step 2 of 3

Preheat a clean frying pan or sandwich press. Top one half of bread with lamb mixture. Sprinkle evenly with cheeses. Fold bread to cover filling. Cook in pan or sandwich press for 4-5 minutes or until golden and cheese has melted.

Step 3 of 3

Meanwhile, steam or microwave beans until tender. Drain. Refresh under cold water. Drain. Combine beans, spinach and basil in a serving bowl. Drizzle with remaining oil and toss to coat. Season. Serve piadina with salad.
