- 4 thick gourmet sausage, cooked, cooled and thinly sliced (sausage of your choice )
- 500grams cabbage, shredded
- 300grams carrots, grated
- 100grams jerusalem artichokes, peeled and very thinly sliced
- 1/2 green capsicum, deseeded and thinly sluced
- 100grams red onions, peeled and thinly sliced
- 100grams rocket and spinach mix, thinly sliced
- 1/2 lime, juice and zest
- 2tablespoons vietnamese mint, roughly chopped
- 2tablespoons sweet chilli sauce
- 2teaspoons sesame oil
- 1/2teaspoons sumac
- 1tablespoons sesame seeds, roasted
- 1tablespoons fish sauce
- 1 pinch salt and black pepper (to taste)
- 2teaspoons rice wine vinegar
- 1tablespoons fresh coriander, well washed, chopped

Method
Step 1 of 3
Mix all the sumac, vinegars, sesame oil and lime juice and zest and chilli sauce to make dressing
Step 2 of 3
Mix all dry ingredients together including sesame seeds and mix through dressing and thinly sliced sausages (can use any good quality lower fat tasty sausages even vegetarian ones will work with this)
Step 3 of 3
Adjust seasoning and serve immediately
