  • 405grams soft taco kit
  • 1 tomato, de-seeded and chopped
  • 1/2 cup fresh coriander leaves
  • 1 onion, diced
  • lettuce, shredded (for serving)
  • 400grams can pinto beans
  • sour cream (to serve)
  • 1 lime, cheeks (to serve)
  • 500grams beef mince
  • 1tablespoons olive oil
  • 2 clove garlic, crushed
  • 1 cup tasty cheese, grated

Method

Step 1 of 3

Heat oil in a frypan over high heat. Add onion and garlic and sauté for 2 minutes. Add mince and cook for 5 minutes, breaking up any large pieces. Stir in taco seasoning sachet from kit and ¾ cup water, simmer for 10 minutes. Remove from heat and stir through Edgell Pinto Beans.

Step 2 of 3

Place folded tortillas from kit in a lightly greased 23cm spring form pan. Fill each tortilla with mince mixture. Sprinkle over cheese and bake in a preheated oven at 200°C for 10 minutes or until cheese has melted. Remove from oven and allow to stand for 10 minutes.
