- 2tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 500grams lean minced beef
- 700grams passata
- 400grams can red kidney beans, rinsed and drained
- 2tablespoons hot chilli sauce
- 1 pinch salt
- 1 pinch pepper
- 8 soft corn tortillas (to serve)
- 125grams Cheddar cheese, grated (to serve)
- 125grams sour cream (to serve)
- 1 handful coriander sprigs (to serve)

Method
Step 1 of 4
Heat the oil in a saucepan, add the onion and garlic and cook over a high heat for 5 minutes until softened. Add the minced beef and cook for 5 minutes until browned, breaking it up with a wooden spoon.
Step 2 of 4
Stir in the passata, beans, chilli sauce and salt and pepper to taste and bring to the boil. Reduce the heat and simmer for 15 minutes until thickened.
Step 3 of 4
Meanwhile, put the tortillas on a large baking sheet and warm through in a preheated oven, 220°C(Gas 8), for 3-5 minutes to soften.
Step 4 of 4
Place the tortillas on a serving plate in the centre of the table. Take 2 tortillas per person and spoon some chilli into each one. Top with a quarter of the cheese and soured cream and a little coriander, roll up and serve.
