  • 1 Ingham’s breast turkey mince
  • 1 can black beans no added salt, drained
  • 1 cup corn kernels
  • 1 cup grated tasty cheese
  • 1 jar Mexican salsa
  • 6 large taco shells
  • 1/4 cup coriander, chopped
  • 1/4 spring onion, chopped
  • 1/2 brown onion, finely chopped
  • 1/2teaspoons cumin powder
  • 1/2teaspoons smoked paprika
  • 1tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 80grams guacamole (optional to serve)
  • 2 cloves garlic, finely chopped

Method

Step 1 of 4

In a large skillet at medium heart add onions, garlic, cumin, paprika and Turkey mince.

Step 2 of 4

Season with salt and pepper and stir using a wooden spoon to break the lumps. Cook for 10 minutes or until the turkey mince its brown and cooked

Step 3 of 4

Portion out the beans, corn, coriander, & spring onions in small bowls

Step 4 of 4

On a flat surface place, the taco and top with 2 tablespoons turkey, add beans, corn, coriander and spring opinions and top it with Cheese. Optional to add some guacamole
