  • 1teaspoons dried oregano
  • 1/2 lemon, rind grated and juiced
  • 200grams tzatziki
  • 100grams Greek-style feta
  • 1/2 iceberg lettuce, shredded
  • 4 wholemeal pita pockets
  • 350grams lamb leg steak, cut into thin strips

Method

Step 1 of 4

To make the sweet potato chips, preheat oven to 220°C and line a large baking tray with baking paper. Cut sweet potato into 1cm-thick chips. Spread in a single layer on tray, spray well with oil and season. Bake for 25 minutes or until golden brown.

Meanwhile, combine lamb, lemon rind and juice, garlic and oregano in a bowl. Mix well and season.

Step 3 of 4

Spray a large frying pan with oil and heat over a high heat. Cook lamb strips for 2-3 minutes or until evenly browned.

Step 4 of 4

Meanwhile, warm pita breads in the oven while chips are cooking. Split pita in half and fill with lettuce, tomato, lamb and chips. Dollop with tzatziki and crumble over feta to serve.
