  • 1 green capsicum, deseeded, diced
  • 1 red capsicum, deseeded, diced
  • 1 large red onion, cut into chunks
  • 500grams Greek salad (to serve)
  • 3teaspoons dried oregano
  • 1teaspoons lemon, rind grated
  • 200grams Greek yoghurt
  • 1tablespoons olive oil
  • 1 large garlic clove, crushed
  • 800grams lamb, diced

Method

Step 1 of 3

Soak 8 bamboo skewers in a bowl of water.

Step 2 of 3

Combine the yoghurt, garlic, oregano and lemon rind in a glass bowl. Place the lamb in a separate bowl. Add 1/4 cup of yoghurt mixture to the lamb and stir to coat. Chill in the refrigerator for at least 30 minutes, or longer, if time permits.

Step 3 of 3

Preheat a barbecue grill on high. Thread lamb onto prepared skewers alternately with capsicum and onion. Drizzle with oil. Cook for 5 minutes, turning, until golden and cooked to your liking. Transfer to a platter. Make Greek salad according to packet instructions. Serve skewers with remaining yoghurt sauce and salad.
