Corn & feta salad
- 1 fresh long red chilli, thinly sliced
- 1 small red onion, finely chopped
- 4 corn cobs, husks removed
- 2tablespoons lime juice (plus wedges, to serve)
- 60grams baby spinach leaves
- 70grams feta, crumbled
- 1 avocado, chopped
- 1teaspoons mexican chilli powder
- 600grams beef scotch fillet steaks
- 2tablespoons olive oil
- crusty baguette (to serve)
Description
Enjoy this zesty BBQ steak recipe as-is or use it as a delicious filling in soft tacos.
Method
Step 1 of 3
Heat a large chargrill over medium-high heat. Cook 3 corn cobs, turning, for 10-12 minutes or until charred.
Step 2 of 3
Meanwhile, drizzle half the oil over steaks. Sprinkle with chilli powder and season with salt. Cook on chargrill for 3-4 minutes on each side or until cooked to your liking. Transfer to a plate. Stand, covered, for 5 minutes before slicing thickly.
Step 3 of 3
Cut kernels from all 4 corn cobs. Combine corn, avocado, onion, spinach, chilli, feta, lime juice and remaining oil in a bowl. Season to taste. Serve corn salad with sliced beef, lime wedges and bread.
