  • 3teaspoons fish sauce
  • 2 Lebanese cucumbers, halved, deseeded and angle sliced
  • 2 handful mint, sliced
  • 2 green shallots, sliced
  • 1 BBQ chicken
  • 1 lime, wedges (to serve)
  • 1/4 cup sweet chilli sauce
  • 300grams southern style coleslaw

Method

Step 1 of 2

Remove meat from chicken, discarding skin and bones. Shred meat.

Step 2 of 2

Combine coleslaw in a bowl with cucumber and chicken. Top with shallots, mint and noodles. Stir chilli sauce and fish sauce together. Drizzle over salad and serve with lime wedges.
