  • 30grams peanuts, chopped
  • 150grams vermicelli rice noodles, soaked
  • 1/2teaspoons sesame oil
  • 2teaspoons fish sauce
  • 50grams bean sprouts
  • 1 red capsicum, thinly sliced
  • 1 carrot, grated, peeled
  • 2tablespoons coriander (to serve)
  • 2tablespoons mint, torn
  • 5 spring onions, sliced
  • 1 lemon, juiced and zested
  • 1 1/2 cup sweet chilli sauce (save 1/2 cup for later)
  • 300grams beef fillet, thinly sliced
  • 1tablespoons olive oil
  • 1 clove garlic, finely chopped
  • 1/2 cup hot chilli sauce

Description

Try our beef salad - a flavourful combination of lean beef, and crunchy veggies, all tossed in a hot chilli sauce. Perfect for light lunch or dinner. Enjoy!

Method

Step 1 of 5

Combine beef, oil, garlic and sweet chilli sauce in a glass bowl. Set aside to marinate.

Meanwhile, combine noodles, spring onion, bean sprout, capsicum and carrot in a large bowl.

To make chilli dressing, add chilli sauce, sesame oil, fish sauce, mint, lemon zest and juice into a jar. Seal and shake well.

Stir-fry beef for 2 minutes in a hot wok until well browned.

Step 5 of 5

Arrange the noodles on a large platter and top with beef. Pour over dressing. Garnish with coriander and peanuts. Serve.
