- 500grams Woolworths Heart Smart Extra Lean Beef Mince
- 1tablespoons fresh ginger, finely grated
- 1 stick lemongrass, finely chopped (white part only)
- 1 1/2tablespoons vegetable oil
- 2tablespoons salt reduced soy sauce
- 450grams microwave brown rice
- 250grams zucchini spaghetti
- 1/2 red onion, thinly sliced in to rounds
- 1 red chilli pepper, thinly sliced
- 2 sprigs coriander (to serve)
- 1 lime, cut into cheeks (to serve)

Method
Step 1 of 4
Heat oil in a large frying pan over high heat. Add beef and cook, breaking up lumps with a wooden spoon, for 4 mins or until well browned.
Step 2 of 4
Add ginger and lemongrass, then cook, stirring for 30 secs or until fragrant. Add soy sauce and 1 tbs water, and stir to combine. Remove pan from heat.
Step 3 of 4
Heat brown rice and cook zucchini spaghetti according to packet instructions.
Step 4 of 4
Divide rice, zucchini, onion and beef mixture among bowls. Sprinkle with chilli and coriander. Serve with lime cheeks.
