  • 400grams salmon fillet, cut into 3cm dice
  • 2tablespoons MR CHEN’S Teriyaki Sauce
  • 1 head broccoli, cut into florets
  • 1 small red capsicum, sliced
  • 300grams MR CHEN’S Thick Egg Noodles
  • 1/4 cup MR CHEN'S Soy Sauce
  • 2tablespoons honey
  • 2 spring onion, finely sliced
  • 1 clove garlic, crushed
  • 1tablespoons sunflower oil
  • lemon, cut into wedges (to serve)

Description

This Teriyaki salmon stir-fry combines authentic Japanese flavours with tender fish, crunchy veggies and soft egg noodles all on the table in just 15 minutes.

Method

Step 1 of 6

1. Combine salmon and teriyaki sauce in a bowl, and toss to coat.

Step 2 of 6

2. Meanwhile, bring a large saucepan of water to the boil. Cook egg noodles for 7 minutes, stirring occasionally to help separate. Add broccoli and capsicum and cook with the noodles for 1 minute. Drain.

3. Whilst noodles are cooking, combine the soy sauce, honey, spring onion and garlic. Set aside.

4. Heat half of the oil in a large frying pan or wok over medium heat. Add salmon to pan and sear, tossing regularly for approximately 4-5 minutes, or until cooked to your liking. Remove from the pan and keep warm.

5. Wipe out the pan, return to the heat with remaining oil. Add broccoli, capsicum, noodles and soy sauce mixture to the pan. Cook whilst tossing for 1-2 minutes.

6. Divide noodles between serving bowls, top with the salmon and a squeeze of lemon.
