  • 1 onion
  • 3 clove garlic
  • 400milliliter coconut cream
  • 540grams bamboo shoots , slices in water
  • 100grams peas
  • 2 sprig coriander (or shallots)
  • 1tablespoons olive oil
  • 1tablespoons thai green curry paste
  • 2teaspoons fish sauce (optional)
  • 1 cup basmati rice

Method

Step 1 of 4

Cut chicken thigh fillet into bite size. Cut garlic, onions, coriander / shallots into small pieces.

Step 2 of 4

Heat oil, cook garlic and onions until golden then add chicken, stir well. Add curry paste, coconut milk and bamboo shoots (fish sauce optional). Stir well and simmer for 15 minutes.

Step 3 of 4

Cook rice as per packet directions and microwave peas.

Step 4 of 4

Serve rice, peas and chicken curry. Sprinkle coriander / shallots on top.
