- 1tablespoons Fish Sauce
- 1 small red capsicum (chopped into 2cm pieces)
- 2tablespoons coriander
- 500grams chicken thigh fillets (diced into 2cm pieces)
- 12 red or yellow grape tomatoes
- 2 Coconut Milk
- 1/3 cup Thai Yellow Curry Paste
- 1tablespoons brown sugar
- 1tablespoons vegetable oil
- 120grams green beans (trimmed and chopped)
- 2 cups rice (steamed, to serve)
Method
Step 1 of 4
Heat oil in wok over medium-high heat. Add curry paste and cook for 1 minute or until fragrant. Add chicken and stir-fry for 2 minutes.

Reduce heat and add coconut milk, fish sauce and sugar.
Step 3 of 4
Stir and simmer for 5 minutes. Add vegetables and cook for a further 5 minutes until chicken is cooked and vegetables are tender.
Step 4 of 4
Garnish with coriander. Serve with steamed rice.
