  • 1 cup red wine
  • 1tablespoons plain flour
  • 20grams butter
  • 300grams green beans, trimmed, steamed (to serve)
  • 200grams swiss brown mushrooms, sliced
  • 3 French eschalots, sliced
  • 1tablespoons dijon mustard
  • 500grams frozen mashed potato
  • 1tablespoons olive oil
  • 10grams fresh tarragon, finely chopped
  • 4 beef fillet steaks (140g each)

Method

Step 1 of 4

Heat oil and butter in a frying pan over medium heat. When melted and hot, add steaks and cook for 3 minutes each side or until golden. Transfer to a warm plate and cover loosely with foil.

Step 2 of 4

Cook frozen mashed potato as per packet instructions. Keep warm.

Step 3 of 4

Add mushroom and eschalot to pan. Cook for 8 minutes until mushroom is golden. Sprinkle over flour and stir. Cook for 1 minute. Slowly add wine and 1/2 cup water, stirring constantly, and bring to the boil. Whisk in mustard and tarragon. Season with salt and pepper.

Step 4 of 4

Return steaks to pan and cook for 3 minutes for medium rare or until cooked to your liking. Serve steaks with sauce, green beans and mashed potato.
