- 1/4 cup currants
- 80grams butter
- 2 carrots
- 1/2 head cauliflower
- 1/2 cup continental parsley
- 2tablespoons extra virgin olive oil
- 2 sheets puff pastry
- 1tablespoons Dijon mustard
- 400grams beef sizzle steaks
- 20grams sage
- 80grams pistachios
- 120grams mozzarella
Description
Our beef olives recipe is a delicious and hearty way to enjoy beef. Tender beef in a savoury pastry, it's the perfect entree or side. Try them out today.
Method
Step 1 of 5
Place carrot, currants and vinegar in a bowl and set aside.
Step 2 of 5
Heat 1 tbs oil in a large frying pan over high heat. Add cauliflower, pistachios and 2/3 cup water and cook for 10-12 minutes or until cauliflower is tender. Transfer to a bowl and cover to keep warm.

Meanwhile, lay steaks on a board. Spread one side of each steak with mustard and top with half the sage leaves and cheese, then roll up and secure with toothpicks.

Return pan to medium-high heat with remaining oil. Add beef olives and cook for 5 minutes, turning frequently, or until browned. Add butter and remaining sage and cook for a further 1 minute, spooning butter over the beef, or until golden and sage is crisp.
Step 5 of 5
Add parsley and half the carrot mixture to cauliflower, top with beef olives and serve with remaining carrot mixture.
