  • 200grams carrots, peeled and diced
  • 200grams brown onions, peeled and diced
  • 400grams celeriac, peeled and diced
  • 375grams field mushrooms, thickly sliced
  • 1 medium yellow capsicum, deseeded and diced
  • 1tablespoons fresh oregano, chopped
  • 2 clove garlic, peeled and minced
  • 1teaspoons dried tarragon
  • 2tablespoons basil, chopped
  • 1/2teaspoons dried thyme
  • 400grams can diced tomatoes
  • 1 cup shiraz
  • 500milliliter beef stock
  • pinch salt and black pepper
  • 1teaspoons rice bran oil
  • 3 bay leaves

Description

A Slow cooked tender and full of flavour beef casserole, the whole family will enjoy!!!

Method

Step 1 of 5

Add the oil to a cast iron Dutch oven or thick based pot, brown the onions carrots and beef.

Step 2 of 5

Add the capsicum, mushrooms and stock, simmer with lid on for 15 minutes on low heat.

Step 3 of 5

Add tomatoes, garlic, wine and herbs and continue to cook on low heat for a further 3 hours and 15 minutes.

Step 4 of 5

Add diced celeriac, seasoning and mix well replace lid and cook for a further 30 minutes or until celeriac is tender and sauce reduced.

Step 5 of 5

Adjust seasoning and enjoy.
