- 3 large onions, finely diced
- 1kilograms lean minced pork
- 1 handful fresh flat-leaf parsley, finely chopped
- 2teaspoons cayenne pepper
- 2teaspoons dried thyme
- 2 eggs
- 3tablespoons plain flour
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 12 large tomatoes
- 6tablespoons olive oil
- 2tablespoons dried oregano

Method
Step 1 of 3
Put the onions, minced pork, parsley, cayenne, thyme, eggs, and flour in a mixing bowl, season well with salt and black pepper, then mix together with your hands for 5 minutes or until you have a chunky paste. Chill in the refrigerator for 20 minutes to firm the mixture up a little. Meanwhile, preheat the oven to 180°C .

Take handfuls of the mixture and roll into balls about 5cm across - you should get around 24 in all. Place them on a large non-stick baking tray. Cut the tomatoes in half and place them skin-side down among the meatballs, so each meatball is in-between tomatoes and vice versa. Drizzle over the oil, sprinkle with the oregano, then cover the tray with silver foil.

Cook in the oven for 30 minutes, then remove the foil and cook for another 30 minutes, or until nicely browned. Serve with fresh crusty bread and green salad.
