- 2tablespoons coriander (to serve)
- 1tablespoons ginger, grated
- 4 French shallots, finely chopped
- 5milliliter virgin olive oil spray
- 1 lemon, halves chargrilled (to serve)
- 1tablespoons sesame seeds, toasted (to serve)
- 600grams minced beef
- 200grams minced pork
- 1 lemongrass stem, white part only, finely chopped
- 1 handful kaffir lime leaves, finely chopped
- 2teaspoons caster sugar
- 3 cloves garlic, crushed

Method
Step 1 of 2
Combine minces, shallot, garlic, ginger, lime leaf (reserving a little for garnish), lemongrass, sugar and fish sauce in a large bowl until sticky. Divide into 16 equal portions and shape into short sausage lengths. Thread onto skewers. Chill for 1 hour.
Step 2 of 2
Preheat chargrill or barbecue grill on high. Spray skewers with oil. Cook, turning frequently, for 8-10 minutes or until cooked through. Serve with lemon halves, reserved lime leaf, coriander and sesame seeds.
