  • 1 1/2 cup polenta (to serve)
  • 1/4teaspoons chilli flakes
  • 1 1/2teaspoons paprika
  • 4 cup salt reduced chicken stock
  • 500grams turkey mince
  • 800grams can diced tomatoes
  • 1teaspoons oregano
  • 2tablespoons olive oil
  • 1 egg
  • 2 bay leaves
  • 1/4 cup medium grain white rice

Method

Step 1 of 4

Heat oil in a saucepan on medium. Add onion, garlic, herbs and chilli. Cook, stirring, for 2 minutes until soft. Add tomato and 1/2 cup of water. Reduce heat to medium-low. Cover and simmer.

Meanwhile, mix mince, rice, parsley, paprika and an egg in a large bowl. Roll into walnut-sized balls. Add balls to sauce and cook for 25-30 minutes, stirring, until balls are cooked through and sauce thickens slightly.

Step 3 of 4

Bring stock to simmer in a saucepan. Add polenta in a steady stream, whisking continuously. Stir occasionally for 10-15 minutes or until polenta is cooked.

Step 4 of 4

Spoon polenta onto plates and top with meatballs and sauce.
