  • 400grams cooked turkey
  • 200grams puff pastry
  • 1 medium white onion, peeled and chopped
  • 4 cloves garlic, peeled and chopped
  • 1 medium leek, chopped
  • 1 medium celery, chopped
  • 100grams mushrooms, washed, drained and halved
  • 3/4 cup vegetable stock
  • 1tablespoons parsley, chopped
  • 70grams butter
  • 50grams plain flour
  • 1tablespoons rosemary, chopped
  • 1/2teaspoons salt
  • 1teaspoons cracked black pepper
  • 1 medium egg, cracked and lightly beaten

Description

This pie is packed full of crunchy veg and savoury flavours.

Method

Step 1 of 3

Pre-heat the oven to 180°C/160°C fan-forced. Heat up a non-stick pan to a medium heat and fry all the veg for 7 minutes while tossing. Chop up the cooked turkey and add to the pan with the herbs, seasoning and cook for another 2 minutes.

Step 2 of 3

Add butter and plain flour. Add the stock and allow to simmer for 10 minutes until the stock starts to reduce. Once the stock has reduced, remove from the heat and transfer to a large baking tray. 

Step 3 of 3

Cover the ingredients in the rolled pastry and brush the pastry with the egg. Bake in the oven for 60 minutes and allow to cool slightly before serving.
