- 2-3tablespoons curry powder
- 1/2 large cauliflower, cut into florets
- 1 medium sweet potato, cubed
- 1 lime juiced
- 200grams raw quinoa
- 1packets beef, sweet potato & kale meatballs
- 1/4 cup olive oil
- 1/4 cup pistachios, shelled
- 1/4 cup sultanas
Method
Step 1 of 5
Preheat oven to 200°C / 180°C fan forced.
Step 2 of 5
Cook quinoa according to directions on pack and set aside to cool.
Step 3 of 5
Put cauliflower and sweet potato in a roasting tray, toss in olive oil and curry powder. Cook for 20 – 25 minutes.
Step 4 of 5
Meanwhile put the meatballs on a separate tray. Cook for 15 minutes or until cooked through.
Step 5 of 5
Mix quinoa, cauliflower, sweet potato and the meatballs. Add lime juice to taste. Garnish with sultanas and pistachios.
