  • 2teaspoons paprika
  • 2/3 cup dry white wine
  • 550grams long-grain rice
  • 400grams chopped tomatoes
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Method

Step 1 of 2

Preheat the oven to 150°C. Heat the oil in a large heavy-based pan, add the onions, and cook over a medium heat for 5 minutes, or until starting to soften. Add the pork and cook, stirring occasionally, for 5 minutes, or until no longer pink. Add the garlic, parsley, thyme, sage, and paprika and combine well, then add the wine and cook for 5 minutes. Add the rice and tomatoes, stir to combine, then season well with salt and black pepper.

Cover with a lid and cook in the oven for 1 hour. Stir occasionally and add a little hot water if it starts to dry out. Remove from the oven and allow to stand for 10 minutes with the lid on before serving.
