- 500grams pork mince
- 2 spring onion
- 2 garlic cloves
- 1 inch ginger
- 1tablespoons fish sauce
- 1tablespoons soy sauce
- 1 egg
- 1/4 cup breadcrumbs
- 3 pinch salt
- 1 pinch pepper
- 1 can coconut milk
- 1 1/4 cup water
- 1 1/2 cup rice
- 2 bok choy
- 1 bunch coriander
- 2tablespoons chopped peanuts
- 2tablespoons crispy shallots
- 4tablespoons sweet chili sauce
- 2tablespoons oil

Easy dish that the family will love.
Method
Step 1 of 7
Thinly slice the spring onion and separate the whites and greens. Dice the garlic and ginger. In medium bowl add the whites of the spring onion, garlic, ginger, fish sauce, soy sauce pork mince, egg, breadcrumbs, salt and pepper. Mix together until all combined. The mixture should be sticky. Although if it doesn't hold together add some more breadcrumbs.

Roll the pork mixture into golf ball sized balls. Put onto a plate with baking paper and set aside.

In a medium pot add the coconut milk, water and a pinch of salt. Mix together with a spoon. Add the rice. Cover and bring to the boil over a medium heat then turn down to low and simmer for 10 minutes. After 10 minutes turn off the heat and leave covered for a further 15 minutes.

While the rice is cooking heat the oil in a frying pan. Add the meatballs. Turn every couple of minutes until browned all over and cooked through. Approximately 10 minutes.

While the meatballs are cooking. Chop the ends off the bok choy and wash. Place into a pot and cover with water. Add a pinch of salt and bring to the boil. Approximately 5 minutes.

Assemble once everything is cooked. Place the rice in the bottom of the bowl. Place on top some meatballs, bok choy. Sprinkle over coriander, spring onion, peanuts and shallots. Drizzle over some sweet chili and enjoy.
Step 7 of 7
Roughly chop coriander and peanut and put aside with greens of the spring onion.
