Description
A fragrant Moroccan stew packed with seasonal veggies and juicy chicken make this meal a weeknight winner for any friends or family.
Method
Step 1 of 5
Preheat oven to 160°C.
Step 2 of 5
Combine spices and rub into chicken pieces. Heat oil in a frying pan, add garlic and chicken and cook until golden. Transfer to a casserole dish with remaining spices, tomatoes, stock, tomato paste and honey.

Meanwhile, cut vegetables into chunks. Stir into casserole with dates.
Step 4 of 5
Cover with lid and bake for about 1 hour or until meat and vegetables are tender.

Meanwhile, place couscous in a heatproof bowl. Add 2 cups boiling water. Cover and stand for 5 minutes. Stir with a fork to separate couscous grains. Season. Serve tagine with couscous.
