  • 2 cloves garlic, crushed
  • 2 red onions, cut into wedges
  • 2tablespoons fresh parsley
  • 400grams pumpkin, cut into chunks
  • 2 zucchini, cut into chunks
  • 1.80kilograms free-range whole chicken
  • 400grams can butter beans, drained
  • 1 lemon, cut into wedges (to serve)
  • 1/4 cup olive oil
  • 2tablespoons sage, chopped

Method

Step 1 of 2

Preheat oven to 200°C. Cut chicken into 8 pieces. Put chicken, pumpkin and onion into a large roasting pan. Add oil, sage, garlic, salt and pepper. Toss to coat.

Step 2 of 2

Roast for 30 minutes. Add zucchini and beans and gently toss to coat with the pan juices. Return to the oven for a further 10 minutes or until chicken is golden brown and cooked through. Serve dish with lemon and parsley.
