- 2tablespoons plain flour
- 1 bay leaf
- 2 fresh long green chillies, seeded and finely sliced
- 3 tomatoes, chopped
- 1 green capsicum, trimmed, seeded and cut into 2cm strips
- 1 red capsicum, trimmed, seeded and cut into 2cm strips
- 1 yellow capsicum, trimmed, seeded and cut into 2cm strips
- 2 onions, halved lengthways and thinly sliced
- 1/2teaspoons cayenne pepper
- 2 cup chicken stock
- 2tablespoons olive oil
- 2 sprigs thyme
- 4 clove garlic, crushed
- 100grams pancetta, sliced
- 8 chicken drumsticks
- 475grams Woolworths Classic Potato Mash, heated (to serve)
- 100milliliter dry white wine

Method
Step 1 of 3
Place flour into a snap-lock bag. Add chicken drumsticks and shake to coat. Heat olive oil in a large cast-iron casserole pot over a medium-high heat. Add chicken and cook for 5 minutes or until golden. Transfer to a plate.
Step 2 of 3
Add onion, garlic, pancetta, capsicum, chilli, cayenne pepper and tomato to frying pan. Cook for 3-4 minutes or until soft. Add thyme, bay leaf, wine and stock. Add chicken and bring to the boil. Cover and cook, stirring occasionally, for 15 minutes. Remove lid and cook for a further 30 minutes.

Serve with mashed potato.
