- 2tablespoons tomato paste
- 1/4 cup basil leaves, chopped
- 1 green capsicum
- 1 red capsicum
- 2 onions
- 2teaspoons dried oregano
- 4 turkey drumsticks
- 400grams can crushed tomatoes
- 1/2 cup parmesan, grated (to serve)
- 190grams can champignons
- 1/2 cup kalamata olives, pitted
- 1tablespoons olive oil

Method
Step 1 of 3
Set pressure cooker to brown setting (see note). Add oil and brown turkey drumsticks, 2 at a time, for 5 minutes, turning frequently. Return drumsticks to cooker, add onion, tomato, paste, garlic and oregano. Seal pressure cooker and cook on HIGH for 15 minutes.

Release pressure, remove lid and transfer drumsticks to a chopping board. Add capsicum, olives and champignons. Seal pressure cooker and cook on LOW for 5 minutes.
Step 3 of 3
Meanwhile, cook pasta following packet directions. Strip meat from drumsticks, taking care to discard fine bones. Return meat to cooker with basil and simmer for 5 minutes or until reheated. Serve ragu tossed with pasta and basil, topped with parmesan. Note: If your pressure cooker does not have a brown setting, simply brown the drumsticks in a large frying pan, then transfer to pressure cooker.
