- 1 small handful fresh mint leaves
- 1 handful fresh flat-leaf parsley
- 1 handful fresh basil
- 1teaspoons dried oregano
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 400grams sausage meat, skinned
- 1tablespoons plain flour, to dust

Method
Step 1 of 3
Put the onion, mint, parsley, basil, and oregano in a food processor, and blend to a rough paste. Season well with salt and black pepper.
Step 2 of 3
Add the sausage meat, and whiz again until combined. Using your hands, roll the mixture into 12 balls, each about 4cm across. Dust with a little flour to prevent them sticking. Chill for 30 minutes to firm.
Step 3 of 3
Heat the barbecue or charcoal grill until hot. Grill the sausage and herb balls over a medium heat, turning occasionally, for 12-15 minutes until evenly browned and cooked through. Serve hot with fresh crusty bread and a spicy or garlic mayonnaise.
