Description

This sweet and slightly spicy slow-cooked beef tajine is worth the wait.
Instruction tip
Serve with chopped coriander on top and couscous, if desired.

Method

Step 1 of 3

Pre-heat the oven to 160°C. Heat half of the oil in a large, ovenproof casserole dish. Toss the beef in flour and brown in batches, cooking for 2-3 minutes. Remove from the dish with a slotted spoon and set aside.

Step 2 of 3

Heat the remaining oil and cook the onions for 5 minutes to soften, add the capsicums and harissa paste and cook for 2 minutes. Stir in the apricots, chopped tomatoes, a can of water and the stock cube and bring to the boil. Stir in the honey and browned beef.

Step 3 of 3

Cover with the lid and place in the oven for 2 hours. Remove the lid, stir well and place back in the oven uncovered for 30 minutes, until the sauce is reduced and beef is completely tender.
