- 2tablespoons sesame oil (divided)
- 8 chicken thighs (skinless, boneless, chopped into chunks)
- 2 large onions (peeled and chopped)
- 4 cloves garlic (peeled and minced)
- 5centimeters ginger (peeled and grated)
- 400grams kimchi
- 2 cup chicken stock
- 1tablespoons soy sauce
- 1/2 bunch coriander (fresh, leaves picked, stalks sliced)
Description
This delicious Korean-inspired stew cooks low and slow until the chicken is meltingly tender.
Method
Step 1 of 3
Heat a drizzle of oil in a large, hob-safe casserole dish and cook the chicken for 3-4 minutes. Add the garlic, onions, coriander stalks and ginger and cook for 5 minutes, stirring.
Step 2 of 3
Pour over the kimchi, including the liquid, and the chicken stock, remaining oil and soy sauce, bring the boil, reduce the heat and simmer with the lid partially on for 45 minutes, stirring occasionally.
Step 3 of 3
Serve in bowls with fresh coriander on top and rice or noodles, if desired.
