- 1tablespoons Squid Brand Fish Sauce
- 1/2 cup basil leaves
- 1 sprigs coriander (for garnish)
- 1tablespoons oil
- 400grams pork scotch fillet
- 400milliliter TCC Premium coconut milk
- 1 cup pumpkin

Method
Step 1 of 6
Heat oil over medium heat, add red curry paste and stir-fry for 1 minute or until oil appears.
Step 2 of 6
Add half of the coconut milk and cook for 2 minutes, stirring frequently.
Step 3 of 6
Add pumpkin and cook for further 2 minutes.
Step 4 of 6
Add pork, the remaining coconut milk, sugar and fish sauce and bring to boil, then keep boiling for 5 minutes.
Step 5 of 6
Add basil and stir through.
Step 6 of 6
Remove from heat and garnish with coriander.
