  • 2tablespoons thai basil (to serve)
  • 1 small onion, sliced
  • 1 large sweet potato, peeled, diced
  • 250grams chicken, diced
  • 1 lime (to taste)
  • rice (to serve)
  • 2tablespoons vegetable oil
  • 285grams Street Kitchen Yellow Thai Curry (including curry paste spice pack and coconut milk)

Method

Step 1 of 4

Heat oil in a medium saucepan over high heat. Add chicken and cook, turning, until golden.

Step 2 of 4

Add spice mix (lime leaves and chilli), onion and sweet potato. Stir to combine and cook for 30 seconds.

Step 3 of 4

Add curry paste, coconut milk and water. Stir well, cover and reduce heat to simmer.

Step 4 of 4

Cook for 20 minutes or until chicken and potato are cooked. Serve with rice, lime wedges and Thai basil.
